Tangy Honey Chicken

This was a recipe I made up purely on the fly tonight but it turned out great, is super easy, and was LOVED by the family! :)




Tangy Honey Chicken Marinade
1.5 T Raw Honey
1/4 cup Red Wine Vinegar
just a bit of fresh cracked pepper
a few slices of red onion (optional)

Combine all ingredients in a small pot and bring to a simmer stirring constantly. You are only simmering long enough to combine all the ingredients well. When you are done pour over raw chicken, cover, and place in the refrigerator for an hour. When cooking your chicken pour remaining marinade and onions over the chicken while it's cooking for extra "sauce."

*Note: I used thinly sliced chicken breast with this cooked in 1tsp coconut oil in a fry pan.

Hearty Beef Cabbage Soup

It's definitely a cold, wet, wintery night here. That kind of weather always gets me in the mood for soup! I have always LOVED beef cabbage soup and tonight I'm sharing my Mom's recipe with a couple of changes. It worked out great that we were having this tonight because our local grocery store has cabbage on sale for .25 a pound! Woohoo! I love cheap and healthy and cabbage is definitely healthy! Hearty Beef Cabbage Soup

1lb of lean ground beef (if you really want I'm sure turkey would work fine, but there's nothing wrong with a bit of beef once in a while)
1/2 a medium head of cabbage chopped or shredded
1 small bell pepper chopped in small pieces
1/2 an onion diced
1 (16oz) can of kidney beans
3 cups of fresh diced tomatoes or 1 (28oz) can of diced tomatoes
4 tsp of Better than Bouillon Organic Beef Base (can buy here) or 4 cubes of beef bouillon
3.5 cups of water
1/4 tsp garlic powder
1/4 tsp garlic salt
sea salt and ground pepper to taste

Cook beef and drain off any grease. Add all ingredients until it is boiling. Once the pot comes to a boil, reduce to a simmer and let it cook for an hour. Enjoy! :)
